It’s #friyay, and today I’m cleaning out my re It’s #friyay, and today I’m cleaning out my refrigerator to get rid of everything that needs to be used up. Soup base, shepherd’s pie, and carrot cake are just some of the things I’ll be Swedish Cheffing. Last week, I made this amazing soup and I want to share the recipe with you. Butternut Squash Soup - 1 butternut squash, peeled and cubed - 2 red capsicums, seeds removed - 1 block/200g Danish feta - stock to taste Instructions Throw all ingredients into an oven proof dish, drizzle with oil, and bake until golden. I used my air fryer at 160C for an hour. Once done, chuck everything in a blender and hit the GO button. Add as much stock as you want or need to get your favourite soupy consistency. Heat, eat, enjoy. I chucked this one together on the fly after scrolling aimlessly through similar recipes and I think it may be my new favourite soup.
